Chicken Lettuce Wrap Sandwich

Chicken Lettuce Wrap Sandwich Without Sauce
ingredients
- 2 (6 to 8 ounces each) chicken breast halves
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 8 leaves of green leaf lettuce
- 2 cups shredded carrots
- 2 cups shredded red cabbage
- 2 cups sliced mushrooms
- ½ cup minced cilantro
preparation
- Prepare the dipping sauces.
- Sauté garlic in olive oil in large skillet.
- Add chicken and cook until the juices run clear and the chicken is lightly browned.
- Remove from skillet and cool to room temperature. Cut into small chunks. Set aside.
- Take a lettuce leaf and remove ribs. Place 2 heaping spoonfuls of chicken onto leaf.
- Top with your choice of carrots, cabbage, mushrooms, and cilantro. Add about 1 tablespoon dipping sauce of your choice.
- Roll the leaf around the chicken and vegetables, burrito style.
Dipping Sauces: Cream Chile Sauce and Asian Dipping Sauce
Cream Chile Sauce
Serves 24 Serving Size = 1 tablespoon
- 1 cup plain non–fat yogurt
- ¼ cup chopped green chile
- 3 green onions minced
- 1 clove garlic, minced
- 1 pinch kosher salt
Combine and pulse all of the ingredients in the blender until smooth.

Asian Dipping Sauce
Serves 24 Serving Size = 1 tablespoon
- 1 cup low sodium soy sauce
- 1 to 2 teaspoons sesame oil
- 3 minced green onions
- 1 teaspoon Splenda® or sweetener
- 1 clove garlic, minced
Combine all of the ingredients in a small bowl and serve.
