Glazed Chicken Skewers

1 Serving = 2 skewers of chicken
Glazed Chicken Skewers
ingredients
- 6 boneless chicken breast halves (4 to 6 ounce each), sliced into strips
- 2 tablespoons olive oil
preparation
- Soak 16 wooden skewers in water for about 2 hours to prevent them burning or scorching during cooking time.
- Thread each skewer with 2 to 3 strips of chicken.
- Place skewers on a rimmed baking sheet. Brush with oil.
- Bake for 11 minutes at 400 degrees. Turn each skewer over and bake another 11 minutes or until juices run clear.
- Remove from oven. Brush each piece of chicken with about 1 teaspoon of glaze.
- Reduce heat in the oven to 350 degrees.
- Bake skewers for another 8 to 10 minutes.
Peanutty Glaze
ingredients
- ¾ cup peanut butter
- ¼ cup light soy sauce
- ¼ cup water
- 1 to 2 teaspoons Splenda® or artificial sweetener
preparation
- Combine ingredients in a small bowl and mix well. Microwave at 50% power for 10 to 15 seconds and stir
